Açaí: A Superfood with Numerous Health Benefits: What to Know

Written and Published by BMT Foods, February 12, 2025

Açaí is a berry native to the Amazon rainforest in Brazil, with Pará State producing 95% of the açaí grown, and Amazon State contributing 5%. The Açaí Palm thrives in the humid, tropical climate of the Amazon region. Açaí berries grow on tall palm trees, requiring careful, manual harvesting. The berries look similar in appearance to a grape, but smaller and containing less pulp.

After being a regional ingredient for many years, in the 1990s, açaí became popular globally, with a plethora of different food and beverage products containing the açaí berry.

Açaí Harvesting Seasons

In Pará State, the peak season for açaí harvesting is from September to November, while in Amazon State the peak season for harvesting is from February to April. After harvesting, açaí berries are carefully packed in baskets and bags. The berries are transported by small boats along the Amazon River and placed on ice to preserve freshness before processing into puree, sorbet, or powder.

The Health Benefits of Açaí

Açaí is a highly nutritious fruit packed with antioxidants, fiber, and healthy fats. These nutrients contribute to health benefits such as improved heart health, better skin, and enhanced energy levels.

Açaí itself is quite tart, so it’s often sweetened or combined with other fruits to balance the flavor. This tartness is one of the reasons why açaí bowls and smoothies often feature a mix of sweeteners and other fruits to create a more palatable taste.

The Difference Between Açaí Solids and Soluble Content

The term “total solids” refers to the non-liquid content of the fruit. This includes pulp and other physical components, excluding the soluble content (like sugar). It’s essentially the “actual” fruit. The term “soluble” primarily consists of sugars (like Brix levels, which measure sweetness), and other soluble compounds. On the other hand, the term “not soluble” includes protein, minerals, vitamins, seeds, etc.

Açaí Puree and its Quality Levels

The total solids content in açaí puree affects the quality and target market. Below is a breakdown of quality levels by total solids content:

  • 8% Total Solids: Higher volume production, typically for bulk or lower-end products.
  • 12% Total Solids: Suitable for industrial use and retail stores.
  • 14% Total Solids: Premium quality, targeted at specific, high-end markets.
  • 18% Total Solids: Super-premium products, usually for specialized or gourmet markets.

Açaí is the perfect ingredient for many food and beverage products.
